Strawberry Cobbler

  • 4 cups frozen strawberries, thawed and drained
  • 1 cup juice from strawberries and water to yield
  • 3/4 cup sugar
  • 2 Tbsp cornstarch
  • 2 Tbsp lemon juice
  • 1/2 tsp cinnamon
  • 2 cups flour
  • 2 Tbsp sugar
  • 1 tsp salt
  • 6 Tbsp shortening
  • 1 cup milk

Preheat Oven to 375 F

Combine juice, sugar, cornstarch and cook until mixture thickens. Add lemon juice, cinnamon and strawberries. Pour into greased 1 1/2 quart casserole dish or baking pan. Mix remaining ingredients to make biscuit dough and drop onto fruit. Bake 35-40 minutes. Enjoy warm with ice cream or cream.
