Oatmeal Berry Bars

Ingredients:

1 cup all purpose flour

1 cup rolled oats

½ packed brown sugar

¾ tsp cinnamon

¼ tsp ground allspice

¼ tsp salt

½ cup butter, melted

2 tsp vanilla extract

2/3 cup berry jam

Preheat oven to 350F.  Line an 8-inch square non-stick pan with foil that extends over the edges to make handles for easy removal.  Grease the foil.

In a medium mixing bowl, whisk together the flour, oats, sugar, cinnamon, allspice and salt until well blended.  Add the melted butter and 1 tsp of vanilla and mix until crumbly.  Press 2 cups of this mixture firmly and evenly on the bottom of the pan.

Mix the remaining tsp of vanilla with the jam and spread evenly on top.  Sprinkle the remaining oat mixture over the jam and pat firmly to make an even crust.

Bake 20 to 25 min or until the top is lightly browned.  Cool bars in pan for 10 minutes on a wire rack.  Cool completely before cutting.

Makes 16 squares

For a gluten free option substitute 1 cup white bean flour for all purpose flour and add 1 ½ tsp xanthan gum.
