Berry Loaf

  • 1 3/4 cups all purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup yogurt (lemon or lime flavour if available)
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tsp grated lemon zest
  • 1 cup fresh or frozen berries (raspberries, saskatoons)

Variation:  Substitute berries with sour cherries (Evans, Juliet, Cupid, Carmine Jewel), and substitute lemon zest with almond extract.  Use plain or vanilla yogurt.

Preheat oven to 350 F.  Spray a 9 x 5 inch loaf pan with non-stick spray and set aside.

In a large bowl, combine flour, sugar, baking powder, baking soda and salt.  Set aside.

In a medium bowl, whisk together yogurt vegetable oil, eggs and zest.  Add wet ingredients to flour mixture and stir just until moistened.  Fold in the berries.

Pour batter into pan and bake for 50 minutes (or until tooth pick comes out clean).  Cool loaf in the pan for 10 minutes.  Remove from pan.  Let cool completely before slicing.
